南瓜派是萬圣節(jié)的傳統(tǒng)食品，在充滿歡鬧和玩樂氣氛的節(jié)日當(dāng)晚，看著南瓜燈、來一塊南瓜派，真是太有節(jié)日的氣氛啦！南瓜派的制作其實(shí)并不復(fù)雜，今天就一起學(xué)起來吧！

Ingredients 原料

1 (8-ounce) package cream cheese,softened

一包奶油芝士（約230克），常溫下軟化

2 cups canned pumpkin, mashed

兩大杯罐裝南瓜，壓碎（如果沒有罐裝的南瓜也無所謂，大家盡可以買新鮮的南瓜回來煮熟、壓碎）

1 cup sugar

一大杯糖

1/4 teaspoon salt

1/4 茶勺鹽

1 egg plus 2 egg yolks, slightlybeaten

一個(gè)雞蛋、加兩個(gè)蛋黃，輕輕打散

1 cup half-and-half

一大杯牛奶和奶油的混合物，各一半(half-and-half是對(duì)這種混合物的簡稱)

1/4 cup melted butter

1 teaspoon vanilla extract

1 piece pre-made pie dough

Directions 制作步驟

1. Preheat the oven to 350 degreesF.

1. 預(yù)熱烤箱至350華氏度(約攝氏180度)

2. Place 1 piece of pre-made pie doughdown into a (9-inch) pie pan and press down along the bottom andall sides. Pinch and crimp the edges together to make a prettypattern. Put the pie shell back into the freezer for 1 hour to firmup. Fit a piece of aluminum foil to cover the inside of the shellcompletely. Fill the shell up to the edges with pie weights ordried beans (about 2 pounds) and place it in the oven. Bake for 10minutes, remove the foil and pie weights and bake for another 10minutes or until the crust is dried out and beginning to color.

2.將買來的現(xiàn)成餅皮放到一個(gè)約9寸的烤盤中，將邊緣和底部都?jí)壕o。在邊緣上切壓出漂亮的褶皺。把餅皮凍回冰箱約1個(gè)鐘頭左右、使其緊實(shí)。1小時(shí)后，用一張鋁箔紙（錫箔紙亦可）將餅皮包裹起來，在鋁箔紙上放上重物（廚房用語稱為pieweights，也可用豆子代替。作用就是使派的餅皮烤出來更成型）放入烤箱。先烤十分鐘、再把重物和鋁箔紙去掉、烤10分鐘，或烤到餅皮變干、上色。

3. For the filling, in a large mixingbowl, beat the cream cheese with a hand mixer. Add the pumpkin andbeat until combined. Add the sugar and salt, and beat untilcombined. Add the eggs mixed with the yolks, half-and-half, andmelted butter, and beat until combined. Finally, add the vanilla,cinnamon, and ginger, if using, and beat until incorporated.

3.烤了餅皮，就來做餡兒吧！在一個(gè)大碗里先打散奶油芝士、跟著加入南瓜泥，繼續(xù)攪拌融合。加入糖和鹽攪拌，再加入雞蛋、蛋黃、奶油牛奶和融化的黃油，一起攪拌均勻。最后再加入香草、肉桂、姜粉一起混合。

4. Pour the filling into the warmprepared pie crust and bake for 50 minutes, or until the center isset. Place the pie on a wire rack and cool to room temperature. Cutinto slices and top each piece with a generous amount of whippedcream.
